Breakfast/Brunch with Ottoman Style Caramelised Onions with Eggs

It was one of those days, I woke up really late and scrolled my phone: first Instagram, then Twitter and finally Youtube for an hour. When I finally got up it was 1pm already. Pushed the button of my old D'elonghi espresso machine, took out my Hario hand grinder and started grinding the beans and thought: "what should I make this morning for breakfast?" I've been really lazy about cooking lately and desperately wanted to break this curse and make something different for myself.

I was reading an Ottoman cookbook last night and really wanted to make something Ottomanish. In Ottoman cuisine, cinnamon is probably the most used spice. In the end, I wanted to make something relatively quick and made another version of "Eggs with Spinach and Caramelised Onions". This one is originally called "Yumurta Kapama". I just switched things a bit with caramelised onions, cinnamon and cheese. 


Here goes the recipe:

ingredients

1 boiled egg, peeled and cut in four
5 shallots or 1/2 onion, sliced thinly
1/4 tsp cinnamon
1/2 black pepper
1/2 tsp sugar
2 tbsp butter
1 tbsp olive oil
2 tbsp parsley, chopped thinly
1 slice of bread


method

In a small pan, melt the butter and add the thinly sliced onions.

On really low heat, let the onions get caramelised by stirring occasionally. After they are really translucent, add the sugar and cinnamon. And let it continue to get caramelised. Because it is a small amount of onions, it will be quick. 

Cut the egg in four pieces and place them as the whites facing up and yellows touching the pan. At this point, you can drizzle the olive oil or add another tbsp of butter to the pan. 

Cut two sticks of the bread slice as seen in the photo. Place them into the empty parts of the pan and let them get grilled on each side. 

When you are sure everything is nice and sizzling, add chunks of cheese and let it melt and get grilled until they're almost like cheese crisps on one side. Because I used a cast iron pan, that happened really quickly and didn't stick.  

Serve immediately and right before serving, turn the eggs upwards and put some of the onions over them, sprinkle some freshly chopped parsley and have a great breakfast or brunch.
